As of the moment, no one is feeling top-notch in this house. Everyone has some sort of congestion, cough, or general icky-ness going on (which is super attractive). Soup is supposed to fix everything, so I tried making a homemade Minnestrone based loosely off this recipe. (I condensed lots of these steps and basically just threw almost everything in the pot at the same time.) It was still tasty and I bet it has some kind of healing powers with all the veggies. My version includes tomatoes, butternut squash, yellow onion, baby spinach, carrots, and white northern beans. Here’s to feeling bright-eyed and bushy-tailed in the not-too-distant future.
